On October 19th, 2024, the Xi Feng Wine Sealing Ceremony and the 1406th Anniversary of the Changshun Zhangu Workshop took place in Baoji City, Shaanxi Province.
At the event, master brewers brought the new Xi Feng raw liquor from the non-material cultural heritage brewing workshop to the sealing ceremony. Eighteen honored guests signed the sealed casks, while the Xi Feng winemakers and their apprentices participated in a “Craftsmanship Heritage Ceremony” to pass down traditional fermentation techniques.
Zhang Zheng, Secretary of the Party Committee, Chairman of the Xi Feng Group, and Chairman of Xi Feng Co., Ltd., stated that Xi Feng Wine adheres to ancient brewing methods, utilizing techniques such as “Old Wu Zeng continuous residue method and earthen pit fermentation.” Throughout the production process, the team strictly follows seven key stages and 55 food safety checkpoints. With 3,000 years of unique brewing skills and a proprietary aging technique, the craft has evolved through generations of winemakers sharing knowledge and experience. Today, Xi Feng embraces modern transformations, incorporating cutting-edge technologies such as industrial internet and artificial intelligence. This innovative approach focuses on raw material traceability, biogenic artificial fermentation, automated brewing, and intelligent bottling, fully committing to creating a digital factory for baijiu. This exploration of refined brewing processes addresses issues like high resource consumption and quality control challenges associated with traditional methods. The integration of industry, academia, and research fosters technological support for further enhancing and innovating the quality of Xi Feng Wine, achieving comprehensive quality management from “farm to table” and shaping a new perception and image of premium Chinese baijiu.
During the sealing ceremony, the Xi Feng Group unveiled the 2024 Jiachun Sealing Ceremony Commemorative Wine, marking the first time since the founding of the brewery that an ultra-high-quality initial batch has been sealed. The liquor has undergone meticulous selection and blending, ensuring it is unblended, untouched, and true to its original flavor, with an alcohol content of 65 degrees.
